A warm year, yet a frisky release, with a wild-fruited energy. Sour black cherry, damson plum, tart raspberry, a layering of ground white pepper, dried thyme and bay laurel. It starts to lean into sarsaparilla\/chinotto, still taut and coiled, but with bitter alpine herbs, bushland scents and a savoury cola note. Bright acidity keeps it lively. Stylistically, this occupies a comfortable middle ground – deep red in colour, with higher alcohol that adds length and a velvety viscosity that ensures this ride is not a short one.
