About 400 metres above sea level, rainfall is typically double our levels at Coriole and it's much cooler — an extremely different climate.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThis fruit had a very high natural acidity, so to build texture and richness through the palate, the juice was pressed straight into barrels and fermented on full solids.
