We pick at a moderate Baume to highlight the aromatic intensity of grenache and explore the floral and spice spectrums of this variety.\u003c\/p\u003e\n\u003cp\u003eWe ferment in open fermenter with a soft extraction during its ten day ferment. We then press to a selection of 3-4 year old French hogsheads for the completion of \u003cmeta charset=\"utf-8\"\u003e\u003cspan data-mce-fragment=\"1\"\u003emalolactic fermentation\u003c\/span\u003e and a further six month maturation before bottling.\u003c\/p\u003e\n\u003cp\u003eA young wine in to bottle, CACTUS CANYON has plenty of juicy red fruits but also some great fine tannin to add length and complexity. The nose shows classic aromas of lavender, pomegranate, white pepper and fragrant black tea. With a beautiful balance of fruit and spice aromas, the palate has fantastic mid-palate volume for a lighter bodied wine and is packed full of flavours of raspberry, spiced cherries and wild thyme.
