We’ve been experimenting with small parcels of fiano and now produce a small amount of our Rubato Fiano – this fruit is from the original vineyard, we work to extract a little more texture and the wine is fully fermented in seasoned oak barrels.
Rich, medium bodied with layers of flavour and texture. Honey, ginger and hazelnut burst from the palate, and the finish is long and persistent.
Music lovers may know the term "rubato" means to play freely or with abandon; not scared to stray from the normally trodden path.

"The stupendous 2020 was quite possibly the most exciting wine I tasted last year. This, borne of a cooler and more attenuated growing season. Perhaps a warmer year suits this skin-inflected, barrel-fermented style. The jury is out. Either way, this is intoxicating. Brilliant! The flavours expand, persist and unravel across a vibrato of saline freshness, a leesy breadth, a whiff of oak and the ginger-chutney skinsiness that segues to quince, apricot pith and jasmine. "Medium-full yellow colour with ripe orange/mandarin and spicy clove and pepper aromas, the palate rich and full-bodied, textural and layered, quite delicious with a generous and rewarding depth of flavour. The finish is clean, dry and firm, and quite emphatic. Barrel fermentation is assumed, but it doesn't show oak too overtly. An impressive wine that takes this grape to another level. 95 points"

"Pear, apple, honey and ginger, a snuffed candle and wax thing happening too, along with fennel and a little spice. It’s chalky and powdery in texture, quince and honey, preserved lemon with pith and bite from that, and a quinine-laced finish of excellent length. Complex, weighty style, done very well. 94 points"
