2021 Rubato Fiano

2021 Rubato Fiano
2021 Rubato Fiano

We’ve been experimenting with small parcels of fiano and now produce a small amount of our Rubato Fiano – this fruit is from the original vineyard, we work to extract a little more texture and the wine is fully fermented in seasoned oak barrels.

Rich, medium bodied with layers of flavour and texture. Honey, ginger and hazelnut burst from the palate, and the finish is long and persistent.

Music lovers may know the term "rubato" means to play freely or with abandon; not scared to stray from the normally trodden path.

Only 30 dozen available - 3 bottle limit per customer.

"Attractive bitter lemon, herb garden, waxy aromas with tonic water notes. Beautifully concentrated and supple with lemon curd, waxy honey flavours, some herbal notes, loose knit chalky textures, superb viscosity and bell clear acidity. Delicious wine with wonderful fruit complexity and development. A revelation! 97 points"
Andrew Caillard MW, The Vintage Journal

"The stupendous 2020 was quite possibly the most exciting wine I tasted last year. This, borne of a cooler and more attenuated growing season. Perhaps a warmer year suits this skin-inflected, barrel-fermented style. The jury is out. Either way, this is intoxicating. Brilliant! The flavours expand, persist and unravel across a vibrato of saline freshness, a leesy breadth, a whiff of oak and the ginger-chutney skinsiness that segues to quince, apricot pith and jasmine. A flying finish. A truly world-class wine. 95 points"
Ned Goodwin, Halliday Wine Companion

"Medium-full yellow colour with ripe orange/mandarin and spicy clove and pepper aromas, the palate rich and full-bodied, textural and layered, quite delicious with a generous and rewarding depth of flavour. The finish is clean, dry and firm, and quite emphatic. Barrel fermentation is assumed, but it doesn't show oak too overtly. An impressive wine that takes this grape to another level. 95 points"
The Real Review

"Pear, apple, honey and ginger, a snuffed candle and wax thing happening too, along with fennel and a little spice. It’s chalky and powdery in texture, quince and honey, preserved lemon with pith and bite from that, and a quinine-laced finish of excellent length. Complex, weighty style, done very well. 94 points"

Wine Profile
Tasting Notes
Rich and medium bodied with layers of flavour and texture. The Fiano Rubato boasts clean and pure aromatics of poached pear, nectarine, quince and shaved fennel. Honey, ginger and hazelnut burst from the palate, with hints of papaya, citrus and spice. The finish is long and persistent.
Winemaker Notes
The fruit was picked a little riper and received more time on skins to encourage extraction, the wine is then fully fermented in seasoned oak barrels. The result is a richer and fuller expression, but still showing the vitality and freshness of the variety.
Food Pairing Notes
Fiano Rubato complements full-flavoured dishes. Pair with a roast pork with all the trimmings.
Other Notes
The grape variety Fiano originates from a province near Campania, east of Naples. Fiano was selected by Coriole when looking for a new southern Italian variety to grow in McLaren Vale, with the first vineyard planted in 2001. The first Australian Fiano was released by Coriole from the 2005 vintage. Perfectly suited to our climate, Fiano is now the largest growing whites category in McLaren Vale. In 2018 we first produced our Fiano Rubato, which celebrates Fiano's true textural qualities. The term rubato may be familiar to music lovers. It means to play freely, or with abandon... not scared to stray from the normally trodden path.
